I’ve never cooked with cornish hens before but they are just like a chicken, but smaller. I wanted to make something that would compliment the season so I decided to try out cornish hens stuffed with wild rice and portobello mushrooms with roasted acorn squash. They were pretty good. Chicken was moist and the skins were well seasoned and crispy. The sweet butteriness of the acorn squash was nice. Perfect for Fall.
