Roast Beef with Vegetables

I used a cheaper cut of meat with this (rump roast as opposed to chuck roast) and it was still fantastic. The meat was moist and well seasoned throughout. I used a cabernet sauvignon in the stock (and to enjoy while cooking of course) which made the best drippings for gravy. Fall isn’t the same without roast beef and vegetables.
