Crab Cake Eggs Benedict

Eggs Benedict is one of my favorite breakfast/brunch dishes to make. I had a craving for crab cakes so I busted this one out. I rolled the cake in panko crumbs which gave it a fantastic crunch. Crab cakes should be more crab than bread. Nothing worse than a bready crab cake. I’m not religious, but since I’m preaching, I’m a big believer in the egg. The egg will save your meal. When in doubt, put an egg on it. Seriously, it adds a great richness and makes so many things just that much better. Pizzas, salads, noodles, etc. I like to think of it as the culinary equivalent to the hipsters putting birds on everything. “Put an egg on it.” Delicious hipster food nonsense.
