We have potlucks at work sometimes and there is someone who keeps bringing deviled eggs that are the most bland and boring deviled eggs I’ve ever had. I’m not really that picky at potlucks, but these are basically pure mayonnaise. Each potluck I see them and I think, oh maybe they got better or someone else brought them. Nope. Still awful. I need to find out who this person is. Anyway, as awful as they were they inspired me to make my own and add a twist to them. I thought avocado and lime would surely do the trick. These are very flavorful and eye catching. Definitely a different take on your grandmas tired mayo and mustard deviled eggs. Try them out! Here is what you’ll need:
- 12 eggs
- 2 ripe avocados
- 1 small lime (juice and zest)
- 1/2 cup green onions chopped
- 1/2 cup plain yougurt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- cilantro tips, smoked paprika, & black salt for garnish
- piping bag
First, place your eggs in a pan and cover with water. Bring to a boil. Once the water is boiling, turn down the heat to low and cover, letting it simmer for 10-12 mins. Drain water and add cold water to cool the eggs so you can handle them.
Garnish eggs with smoked paprika, (you can use lamey lame regular paprika but smoked paprika is da bomb) cilantro leaves, and black lava sea salt. This adds a nice finishing taste and looks great as well.
