Pickled onions are something everyone should have in their kitchen. They’re versatile and extremely easy to make. They can take just about anything from ordinary to awesome. Use them on burgers, sandwiches, tacos, eggs, vegetables, salads, pizzas, everything! You can even caramelize them. This is a pretty basic recipe.
- 1 medium to large red onion
- 1 cup of water
- 1/2 cup of apple cider vinegar
- 1 tbsp sugar
- 1 1/2 tsp salt
(You can get creative and add different things to the pickling liquid if you want, i.e. cloves, peppercorns, bay leaves, herbs, citrus juices & rinds, peppers, and more.)
Thinly slice onion. In a bowl mix the rest of the ingredients until sugar and salt are dissolved. Add onions to mixture making sure they are covered in the liquid. Let it sit for an hour before using or you can store it in a jar for later use.
