Cheese Stuffed Pretzel Bites

The Super Bowl is today and I am not a fan of football I’m afraid, but I am a fan of any excuse to make and eat good food. I love pretzels and I love cheese, so I figured why not put them together. It’s a little time consuming, but definitely worth it. Try them out!

  • 2 cups warm water (100-115°F)
  • 1 tsp active dry yeast
  • 1 tbsp light brown sugar
  • 5 cups all-purpose flour
  • 1 tbsp salt
  • 2 tbsps olive oil
  • 10 cups water
  • 1/3 cup baking soda
  • 16 oz sharp cheddar cheese
  • 1 egg with 1tbsp water
  • coarse salt (I used black salt Hiwa Kai)
  • spicy honey mustard, marinara, or creamy herb dressing for dipping

Add yeast to warm water and let sit for a couple mins to activate the yeast.

Add the sugar and salt stirring to dissolve. Add the flour and mix until doughy.

Knead for a couple minutes and shape into a ball.

Cover and let dough rise for about an hour. While the dough is rising cut the cheese into half inch cubes and set aside.

Once the dough has risen punch down and roll out and cut into 1 inch squares.

Bring about 10 cups of water and the baking soda to a boil in a pan. Drop dough pieces into the baking soda water for about 30 seconds.

Wrap dough squares around cheese cubes and form into balls. Repeat with remaining dough and freeze pretzel balls for about an hour.

Brush each pretzel ball with egg wash and sprinkle with salt. Bake 450˙F for 12 to 15 mins.
