Jalapeno Cheddar Cornbread


It’s winter time and when it’s cold outside I crave warm comforts like cornbread and beans or cornbread and chili or just cornbread by itself. This is a dense, moist, flavorful and savory cornbread that always pleases and warms my cold dead heart.

  • 1 cup flour
  • 1 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup butter melted
  • 1 cup buttermilk
  • 1 egg
  • 2 medium jalapeños diced (canned or fresh)
  • 1/2 cup grated sharp cheddar

Preheat oven to 450˚F. Melt butter and mix with sugar until well incorporated. Sift dry ingredients together. Mix milk , eggs, sugar & butter mixture to dry ingredients. Make sure not to over mix. Mix in cheese and jalapeños. Pour and evenly spread into a buttered 8in x 8in baking pan and bake for 30-40 mins. Cut and serve hot with butter.
